  • 1 (5-7 pound) prime rib roast
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Pat the prime rib roast dry with paper towels.
  3. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, sage, salt, and pepper. Mix well to form a paste.
  4. Rub the garlic herb paste all over the prime rib roast, ensuring it’s evenly coated.
  5. Place the roast, fat side up, in a roasting pan.
  6. Sear the roast in the preheated oven for 15 minutes.
  7. Reduce the oven temperature to 325°F (160°C).
  8. Continue roasting for about 13-15 minutes per pound for medium-rare (125°F or 52°C internal temperature), or until your desired doneness is reached. Use a meat thermometer to check.
  9. Once cooked, remove the roast from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute.
  10. Carve the prime rib and serve immediately.

Notes

  • For a crispier crust, you can broil the roast for the last 1-2 minutes of cooking, watching carefully to prevent burning.
  • If you don’t have fresh herbs, you can use 2 teaspoons each of dried rosemary, thyme, and sage.
  • Serve with your favorite au jus or horseradish sauce.
