Make a thick, flavorful blueberry syrup at home using just a few simple ingredients. This recipe is perfect for pancakes, waffles, or yogurt.

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1 cup water
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Combine the blueberries, water, and sugar in a medium saucepan.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally until the sugar dissolves.
  3. Reduce the heat to medium-low and let the mixture simmer for 15 to 20 minutes. Stir often. The berries will break down, and the liquid will reduce slightly.
  4. For a smoother syrup, mash the berries against the side of the pan with a spoon as they cook. For a thicker syrup, simmer longer until the liquid coats the back of a spoon.
  5. Remove the saucepan from the heat. If using, stir in the vanilla extract.
  6. For a very smooth syrup, strain the mixture through a fine-mesh sieve, pressing down on the solids to extract all the liquid. Discard the solids or save them for another use. If you prefer a thicker syrup with berry pieces, skip straining.
  7. Pour the finished syrup into a clean jar or container. Allow it to cool completely before using or storing. The syrup will thicken more as it cools.

Notes

  • To adjust sweetness, add sugar 1 tablespoon at a time during the simmering process.
  • For a slight tartness, add 1 teaspoon of fresh lemon juice with the other ingredients.
  • Store the cooled syrup in an airtight container in the refrigerator for up to 2 weeks.
  • This syrup works well as a topping for cheesecake or mixed into sparkling water for a simple cocktail base.
