- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 6-8 cups vegetable oil (for frying)
- Powdered sugar (for dusting)
- Whisk together flour, sugar, baking powder, and salt in a large bowl.
- In a separate bowl, whisk together milk, eggs, and vanilla extract.
- Pour wet ingredients into dry ingredients. Whisk until just combined. Do not overmix.
- Heat vegetable oil in a large deep pot or Dutch oven to 375°F (190°C).
- Hold your finger over the bottom opening of a funnel. Pour about 1/2 cup of batter into the funnel.
- Place the funnel over the hot oil. Remove your finger and move the funnel in a circular motion, creating a continuous stream of batter in the oil.
- Fry for 1-2 minutes per side until golden brown.
- Remove funnel cake from oil with tongs. Place on a wire rack lined with paper towels to drain.
- Dust generously with powdered sugar. Serve warm.
