Ingredients

  • Chicken breasts, boneless skinless, 2 large
  • Buttermilk, 1 cup
  • All-purpose flour, 1 1/2 cups
  • Salt, 1 teaspoon
  • Black pepper, 1/2 teaspoon
  • Paprika, 1 teaspoon
  • Garlic powder, 1/2 teaspoon
  • Vegetable oil, for frying
  • Biscuits, 6 large, pre-made or homemade
  • Butter, unsalted, 1/2 cup (softened)
  • Honey, 1/4 cup
  • Powdered sugar, 1 tablespoon

Instructions

  1. Slice chicken breasts horizontally to create 4 thinner cutlets.
  2. Soak chicken cutlets in buttermilk for at least 30 minutes.
  3. In a shallow dish, whisk together flour, salt, pepper, paprika, and garlic powder.
  4. Dredge each buttermilk-soaked chicken cutlet thoroughly in the flour mixture, pressing to coat well.
  5. Heat vegetable oil in a deep skillet to 350°F (175°C).
  6. Carefully fry chicken for 4-6 minutes per side until golden brown and cooked through. Remove and drain on a wire rack.
  7. While chicken cooks, prepare the honey butter: Beat softened butter, honey, and powdered sugar together until smooth and creamy.
  8. Split your biscuits in half.
  9. Spread a generous amount of honey butter on both the top and bottom halves of each biscuit.
  10. Place one piece of crispy chicken on the bottom biscuit half. Top with the other half. Serve immediately.
