Make this quick Honey Garlic Shrimp Fried Rice for a takeout favorite at home. You get sweet, savory garlic shrimp mixed with fluffy rice and crisp vegetables. It cooks fast and tastes amazing.

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 cup chopped yellow onion
  • 1 cup frozen peas and carrots mix
  • 3 cups cooked day-old white rice
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 2 large eggs, lightly beaten
  • 2 green onions, sliced for garnish

Instructions

  1. Toss the shrimp with 1 tbsp soy sauce and 1 tsp sesame oil. Set aside.
  2. Whisk together honey, 3 tbsp soy sauce, rice vinegar, and ginger for the sauce.
  3. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add eggs and scramble until just cooked. Remove and set aside.
  4. Add remaining 1 tbsp oil to the skillet. Add garlic and onion; cook for 1 minute until fragrant.
  5. Add shrimp to the skillet and cook for 2-3 minutes until pink. Remove shrimp and set aside with the eggs.
  6. Add the frozen peas and carrots to the skillet and cook for 2 minutes until tender-crisp.
  7. Add the day-old rice to the skillet. Break it up with your spatula and stir-fry for 3-4 minutes until heated through.
  8. Pour the honey garlic sauce over the rice and toss quickly to coat everything evenly.
  9. Return the cooked shrimp and scrambled eggs to the skillet. Toss everything together for 1 minute.
  10. Serve immediately, garnished with sliced green onions.

  • Using day-old cold rice is key for the best fried rice texture.
  • Adjust the honey if you prefer a less sweet flavor.
