  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the rinsed chickpeas very dry with a paper towel. You want them as dry as possible for crispiness.
  3. Toss the dried chickpeas with the olive oil on the baking sheet. Roast for 15 minutes.
  4. While the chickpeas roast, whisk together the honey, soy sauce, sesame oil, ground ginger, and garlic powder in a small bowl. This is your glaze.
  5. Remove the chickpeas from the oven. Drizzle the honey sesame glaze over the hot chickpeas and toss gently to coat everything evenly.
  6. Return the coated chickpeas to the oven and bake for another 5 to 8 minutes, watching closely so the honey does not burn. They should look sticky and caramelized.
  7. Remove from the oven, sprinkle with sesame seeds, and let them cool slightly before serving.
