2 lbs chicken drumsticks
1/2 cup low sodium soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon sesame oil
1/4 teaspoon black pepper

Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with foil for simple cleanup.
In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and black pepper to create the marinade and glaze base.
Place the chicken drumsticks in a large bowl or zip-top bag. Pour half of the sauce mixture over the chicken. Toss well to coat completely. Reserve the remaining half of the sauce for basting later.
Marinate the chicken for at least 15 minutes, or up to 4 hours in the refrigerator for deeper flavor.
Arrange the marinated drumsticks in a single layer on the prepared baking sheet. Discard any remaining marinade from the bowl used for marinating.
Bake for 20 minutes.
Remove the chicken from the oven. Brush the tops generously with half of the reserved sauce.
Return the chicken to the oven and bake for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is sticky and slightly caramelized.
Remove from the oven. Brush with the final portion of the reserved sauce. Let the chicken rest for 5 minutes before serving.
Sprinkle with sesame seeds if you are using them.
Notes
For extra crispy skin, you can broil the chicken for the last 1-2 minutes, watching closely to prevent burning.
This sauce works well with chicken thighs or wings too. Adjust cooking time as needed.
