Prepare a sweet and tangy chicken salad using cooked chicken, honey mustard dressing, and fresh grapes. This recipe is simple to make and great for lunches or light meals.

  • 2 cups cooked, shredded chicken
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup seedless grapes, halved
  • 1/2 cup chopped pecans
  • 2 stalks celery, finely chopped

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth. This is your honey mustard dressing.
  3. Pour the dressing over the shredded chicken. Mix gently until the chicken is evenly coated.
  4. Fold in the halved grapes, chopped pecans, and chopped celery. Mix just until combined; do not overmix.
  5. Cover the bowl and chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to blend.
  6. Serve the salad over lettuce, inside croissants, or with crackers.

Notes

  • You can substitute plain Greek yogurt for half of the mayonnaise for a lighter version.
  • If you prefer a stronger mustard flavor, increase the Dijon mustard to 2.5 tablespoons.
  • This salad keeps well in an airtight container in the refrigerator for up to 4 days.
