4 cups water
1 cup fresh or frozen blackberries
1/4 cup fresh sage leaves, lightly packed
1/2 cup granulated sugar
1/2 cup water (for syrup)
4 black tea bags (or 4 teaspoons loose leaf black tea)
Ice cubes
Lemon slices for garnish (optional)
Instructions
Make the blackberry sage simple syrup: Combine 1 cup blackberries, 1/4 cup sage leaves, 1/2 cup sugar, and 1/2 cup water in a small saucepan.
Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves. Mash the berries gently with a spoon.
Remove from heat, cover, and let the syrup steep for 20 minutes.
Strain the syrup through a fine-mesh sieve into a clean container, pressing on the solids to extract all liquid. Discard the solids. You should have about 3/4 cup of syrup.
Brew the tea: Bring 4 cups of water to a boil. Remove from heat and add the tea bags (or loose leaf tea). Steep for 5 minutes. Remove tea bags or strain loose leaves.
In a large pitcher, combine the hot brewed tea and the blackberry sage simple syrup. Stir well until fully mixed.
Allow the tea mixture to cool to room temperature, then chill in the refrigerator for at least 2 hours.
To serve, fill glasses with ice cubes. Pour the chilled tea over the ice. Garnish with fresh blackberries or lemon slices if desired.
Notes
For a stronger herbal flavor, steep the sage leaves with the tea bags for the last minute of brewing, then strain everything together.
If you prefer a lighter tea, use only 2 black tea bags.
You can substitute the black tea with an equal amount of hibiscus tea for a caffeine-free, tart version.
