Make a rich, sweet, and spiced cold brew at home using a homemade brown sugar cinnamon syrup.

  • 1 cup coarse ground coffee beans (medium or dark roast recommended)
  • 4 cups cold filtered water
  • 1 cup packed light brown sugar
  • 1 cup water (for syrup)
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Ice cubes
  • 1/2 cup milk or preferred creamer (e.g., oat milk)

Instructions

  1. Prepare the Cold Brew Concentrate: Combine the coarse ground coffee and 4 cups of cold water in a large jar or container. Stir gently to saturate the grounds.
  2. Cover the container and let the mixture steep at room temperature or in the refrigerator for 12 to 18 hours. Do not stir during steeping.
  3. Strain the concentrate: Slowly pour the mixture through a fine-mesh sieve lined with cheesecloth or a paper coffee filter into a clean container. Discard the grounds. This is your cold brew concentrate.
  4. Make the Brown Sugar Cinnamon Syrup: Combine 1 cup brown sugar, 1 cup water, and 1 tablespoon ground cinnamon in a small saucepan.
  5. Heat the mixture over medium heat, stirring until the sugar completely dissolves. Do not boil vigorously.
  6. Remove the syrup from the heat and stir in the vanilla extract. Let the syrup cool completely. Strain the syrup through a fine sieve to remove excess cinnamon solids, if desired.
  7. Assemble the Drink: Fill a tall glass with ice cubes.
  8. Pour 1/2 cup of the cold brew concentrate over the ice.
  9. Add 2 to 3 tablespoons of the cooled brown sugar cinnamon syrup, adjusting to your taste preference.
  10. Top the drink with 1/2 cup of milk or creamer. Stir gently before drinking.

Notes

  • Use a medium or dark roast coffee bean for the best cold brew flavor. Grind your beans coarsely, similar to sea salt.
  • For a stronger cinnamon flavor, you can infuse the syrup with a cinnamon stick while it cools instead of using ground cinnamon.
  • If you prefer a less sweet drink, start with 1 tablespoon of syrup and add more as needed.
  • The cold brew concentrate will keep in the refrigerator for up to two weeks. The syrup will keep for about three weeks.
