Make a refreshing, café-quality Iced Lavender Latte at home using a simple homemade lavender syrup. This recipe balances floral notes with strong coffee.

  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons dried culinary lavender buds
  • 1/2 cup strong brewed coffee or 2 shots espresso (cooled)
  • 1 cup milk (dairy or non-dairy)
  • Ice cubes

Instructions

  1. Make the syrup: Combine water, sugar, and dried lavender buds in a small saucepan.
  2. Heat the mixture over medium heat, stirring until the sugar dissolves completely. Do not boil.
  3. Remove the pan from the heat, cover it, and let the lavender steep for 30 minutes.
  4. Strain the syrup through a fine-mesh sieve into a clean jar, pressing gently on the buds to extract liquid. Discard the buds. Let the syrup cool.
  5. Prepare your coffee: Brew 1 cup of strong coffee or pull 2 shots of espresso and let it cool slightly.
  6. Assemble the latte: Fill a tall glass with ice cubes.
  7. Pour 2 to 3 tablespoons of the cooled lavender syrup over the ice, adjusting to your taste.
  8. Add the cooled coffee or espresso.
  9. Top the glass with 1 cup of your chosen milk.
  10. Stir well before drinking.

Notes

  • For a stronger floral taste without soapiness, steep the lavender for no more than 30 minutes.
  • Use oat milk or whole milk for the creamiest texture.
  • If you prefer a vanilla note, add 1/2 teaspoon of vanilla extract to the syrup while it steeps.
  • To make this a Cold Brew Lavender Latte, substitute the brewed coffee with 1/2 cup of cold brew concentrate.
