Iced Strawberry Lemon Tea

Make a refreshing homemade iced tea combining brewed black tea, fresh strawberries, and bright lemon juice.

  • 6 cups water
  • 4 black tea bags (or 4 tsp loose leaf black tea)
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • Ice cubes
  • Lemon slices and extra strawberries for garnish

Instructions

  1. Combine 4 cups of water and sugar in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely to make a simple syrup. Remove from heat and set aside.
  2. In a separate saucepan, bring the remaining 2 cups of water to a boil. Remove from heat, add the tea bags or loose leaf tea, and steep for 5 minutes. Remove the tea bags or strain the leaves.
  3. While the tea is still warm, add the sliced strawberries to the brewed tea. Let the strawberries steep in the tea for 15 minutes to infuse flavor.
  4. Strain the tea mixture into a pitcher, pressing gently on the strawberries to extract liquid. Discard the steeped strawberries.
  5. Stir the cooled simple syrup and the fresh lemon juice into the strawberry tea concentrate.
  6. Chill the tea mixture in the refrigerator for at least 1 hour until completely cold.
  7. To serve, fill glasses with ice. Pour the chilled tea over the ice. Garnish each glass with fresh lemon slices and extra strawberries.

Notes

  • For a clearer tea, avoid over-muddling the strawberries; steeping them whole or sliced works best for infusion.
  • If you prefer a less sweet tea, start with less simple syrup and add more to taste after chilling.
  • Substitute sparkling water for some of the still water when serving for a fizzy drink.
