Make tender beef and crisp broccoli quickly using your Instant Pot for a savory, takeout-style meal.

Ingredients

  • 1.5 lbs flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 1 pound fresh broccoli florets
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions

  1. Set the Instant Pot to the Sauté function. Add olive oil. When hot, sear the sliced beef in batches until browned on the outside. Remove beef and set aside.
  2. Pour the beef broth into the pot and scrape up any browned bits from the bottom.
  3. Add the soy sauce, brown sugar, rice vinegar, ginger, garlic, sesame oil, and black pepper to the pot. Stir to combine.
  4. Return the seared beef to the pot. Secure the lid and set the vent to Sealing.
  5. Cook on High Pressure for 3 minutes. Once done, perform a Quick Release (QR).
  6. Remove the beef using a slotted spoon and set aside.
  7. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  8. Set the Instant Pot to Sauté (Low setting). Pour the slurry into the liquid in the pot, stirring constantly until the sauce thickens to your liking.
  9. Return the beef to the sauce. Add the broccoli florets. Cook on the Sauté function for 1 to 2 minutes, just until the broccoli is bright green and slightly tender-crisp. Do not pressure cook the broccoli.
  10. Serve immediately over rice or noodles.

Notes

  • For the best texture, slice the beef when it is partially frozen.
  • To prevent mushy broccoli, add it only during the final Sauté step.
  • If you prefer a thicker sauce, increase the cornstarch slurry amount slightly.
