Make tender potatoes coated in a rich, creamy garlic butter sauce quickly using your Instant Pot.

  • 2 lbs small potatoes (like Yukon Gold or red potatoes), quartered
  • 1 cup chicken broth or water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the quartered potatoes, broth or water, salt, and pepper into the inner pot of your Instant Pot.
  2. Secure the lid and set the valve to sealing.
  3. Cook on High Pressure for 4 minutes.
  4. When the cooking cycle finishes, allow a Natural Pressure Release for 5 minutes, then manually release any remaining pressure.
  5. Carefully remove the potatoes using a slotted spoon and set them aside in a bowl. Discard any remaining liquid from the pot.
  6. Place the inner pot back into the Instant Pot base (do not use the pressure setting). Select the Sauté function.
  7. Add the butter to the pot and let it melt. Add the minced garlic and cook for 1 minute until fragrant.
  8. Reduce the heat setting to Low or press Cancel once to stop the Sauté function if your pot runs hot.
  9. Stir in the heavy cream and cubed cream cheese until the cheese is fully melted and the sauce is smooth.
  10. Stir in the Parmesan cheese until incorporated.
  11. Return the cooked potatoes to the pot and gently toss them to coat completely in the creamy garlic butter sauce.
  12. Stir in the fresh parsley before serving.

Notes

  • For best results, use waxy potatoes like Yukon Gold as they hold their shape well during pressure cooking.
  • If the sauce seems too thick after adding the cream cheese, add one tablespoon of milk or extra cream until you reach your desired consistency.
  • You can substitute vegetable broth for chicken broth if you prefer a vegetarian option.
