Make a rich, creamy soup featuring roasted red peppers and tomatoes quickly using your Instant Pot. This recipe provides simple pressure cooking steps for a smooth, comforting meal.

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes, undrained
  • 2 cups roasted red peppers, drained (jarred is fine)
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 teaspoon sugar (optional, to balance acidity)

Instructions

  1. Set your Instant Pot to the Sauté function. Add olive oil. When hot, add the onion and cook until softened, about 4 minutes. Add garlic and cook for 1 minute more until fragrant. Press Cancel.
  2. Add the crushed tomatoes, roasted red peppers, vegetable broth, dried basil, salt, and pepper to the inner pot. Stir gently to combine.
  3. Secure the lid and set the vent to Sealing. Select Manual or Pressure Cook on High for 10 minutes.
  4. When the cooking time finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
  5. Remove the lid. Use an immersion blender to blend the soup directly in the pot until completely smooth. Alternatively, carefully transfer the soup in batches to a regular blender and blend until smooth, returning it to the pot.
  6. Stir in the heavy cream (or coconut milk) and the optional sugar. Taste and adjust salt and pepper as needed.
  7. Set the Instant Pot to Sauté (Low) or Keep Warm. Heat the soup through for 2 minutes before serving.

Notes

  • For a deeper pepper flavor, you can use fire-roasted tomatoes instead of plain crushed tomatoes.
  • If you do not have an immersion blender, let the soup cool slightly before blending in a standard blender to prevent steam buildup.
  • Serve this soup topped with croutons or a swirl of extra cream.
