  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Set your Instant Pot to the Sauté function. Add olive oil and heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the crushed tomatoes, vegetable broth, dried basil, dried oregano, and red pepper flakes (if using). Stir to combine.
  4. Cancel the Sauté function and secure the lid. Set the valve to sealing.
  5. Cook on High Pressure for 10 minutes.
  6. Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then carefully perform a quick release for any remaining pressure.
  7. Open the lid and stir in the heavy cream.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh basil leaves.

Notes

  • For a vegan option, substitute the heavy cream with full-fat coconut milk.
  • Adjust red pepper flakes to your spice preference.
  • If you don’t have an Instant Pot, you can adapt this recipe for a stovetop by simmering in a pot for 20-30 minutes.
