Instant Pot Pulled Pork for a Winter BBQ Fix

Make delicious, tender, saucy pulled pork right in your Instant Pot. Get classic BBQ flavor indoors, perfect for any winter gathering.

Ingredients

  • Pork Shoulder (Boston Butt): 3 lbs
  • BBQ Rub (Your favorite blend): 3 Tbsp
  • Brown Sugar: 2 Tbsp
  • Smoked Paprika: 1 tsp
  • Onion Powder: 1 tsp
  • Garlic Powder: 1 tsp
  • Salt: 1 tsp
  • Black Pepper: 1/2 tsp
  • Apple Cider Vinegar: 1/2 cup
  • Chicken Broth or Water: 1 cup
  • Your favorite BBQ Sauce: 1 cup

Instructions

  1. Trim excess fat from the pork shoulder.
  2. Mix the BBQ rub ingredients (brown sugar, paprika, onion powder, garlic powder, salt, pepper) in a small bowl.
  3. Rub the spice mixture generously all over the pork shoulder.
  4. Pour the apple cider vinegar and chicken broth into the Instant Pot liner.
  5. Place the trivet inside the pot.
  6. Set the pork shoulder on top of the trivet.
  7. Secure the lid and set the vent to sealing.
  8. Cook on High Pressure for 60 minutes.
  9. Allow for a Natural Pressure Release (NPR) for at least 15 minutes before manually releasing any remaining pressure.
  10. Carefully remove the pork and place it in a large bowl. Shred the meat using two forks.
  11. Stir in the BBQ sauce until the pork is well coated. You can serve immediately or use the Sauté function on the Instant Pot to heat the sauce further.

Notes

  • For extra flavor, sear the pork on the Sauté function before pressure cooking.
  • If you prefer a thicker sauce, remove the shredded pork, set to Sauté mode, and let the remaining liquid reduce slightly before mixing it back in.
  • This pork freezes well for future quick meals.
