Prepare keto-friendly chicken breasts stuffed with a rich mixture of cream cheese, spinach, and Parmesan. This recipe is low in carbs and high in fat, suitable for a quick dinner.

  • 4 large boneless, skinless chicken breasts
  • 4 ounces cream cheese, softened
  • 1/2 cup frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a medium bowl, combine the softened cream cheese, dried spinach, Parmesan cheese, garlic powder, salt, and pepper. Mix until fully combined.
  3. Take one chicken breast and carefully cut a deep pocket into the thickest side, being careful not to cut all the way through.
  4. Spoon one-fourth of the cheese and spinach mixture into the pocket of each chicken breast. Secure the opening with toothpicks if necessary.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side until lightly golden brown.
  6. Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  7. Remove the toothpicks before serving.

Notes

  • For extra flavor, wrap each stuffed chicken breast with one slice of bacon before baking.
  • If you do not have an oven-safe skillet, sear the chicken in a regular pan and then transfer it to a prepared baking dish before putting it in the oven.
  • Ensure the spinach is very dry to prevent the filling from becoming watery.
