Ingredients

Scale
  • 1 cup Almond Flour
  • 1/2 cup Powdered Erythritol or Monk Fruit Sweetener
  • 1/4 cup Unsalted Butter, softened
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Baking Powder
  • Pinch of Salt
  • Optional: Keto-friendly sprinkles or sugar-free icing for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, sweetener, and baking powder.
  3. In a separate bowl, cream the softened butter until light and fluffy.
  4. Beat in the egg and vanilla extract until just combined.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until a soft dough forms. Do not overmix.
  6. If the dough is too sticky, chill it for 15 minutes.
  7. Roll the dough out between two sheets of parchment paper to about 1/4 inch thickness.
  8. Use your favorite holiday cookie cutters to cut out shapes. Gently place shapes on the prepared baking sheet.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  11. Decorate with keto-friendly toppings once fully cooled.

Notes

  • For a richer flavor, you can add 1/4 teaspoon of almond extract along with the vanilla.
  • If you prefer a softer cookie, slightly reduce the baking time.
  • This dough freezes well before cutting. Wrap the entire disc tightly in plastic wrap and freeze for up to 3 months.
