Make a rich, low-carb pork tenderloin coated in a savory cream sauce flavored with garlic and fresh herbs. This recipe is simple to prepare for a satisfying keto dinner.

  • 1.5 lb pork tenderloin, trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 4 cloves garlic, minced
  • 0.5 cup heavy cream
  • 0.25 cup chicken broth
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the pork tenderloin with olive oil, salt, pepper, thyme, and rosemary.
  3. Heat an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown, about 2 minutes per side.
  4. Transfer the skillet to the preheated oven. Roast for 15 to 20 minutes, or until the internal temperature reaches 145°F (63°C).
  5. Remove the pork from the skillet and let it rest on a cutting board, tented with foil.
  6. Place the skillet back on the stovetop over medium heat. Add the butter and melt it.
  7. Add the minced garlic and cook for 30 seconds until fragrant. Do not let the garlic burn.
  8. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  9. Reduce the heat to low and stir in the heavy cream. Cook until the sauce thickens slightly, about 2 to 3 minutes.
  10. Stir in the fresh parsley. Taste the sauce and add more salt or pepper if needed.
  11. Slice the pork tenderloin into medallions and spoon the creamy garlic herb sauce over the top before serving.

Notes

  • For a side dish, serve this pork with steamed asparagus or sautéed spinach cooked in butter for a complete keto meal.
  • If you do not have an oven-safe skillet, sear the pork in a regular pan and then transfer it to a baking dish before roasting.
  • You can substitute heavy cream with full-fat coconut cream for a dairy-free, yet still keto, option.
