Prepare a simple, one-pan keto taco skillet featuring ground beef, creamy sauce, cheese, and cauliflower rice. This recipe is low in carbs and suitable for a quick weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) low-carb taco seasoning
  • 1 cup chicken broth
  • 8 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 2 cups riced cauliflower (fresh or frozen)
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup chopped fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and chopped onion. Cook until the beef is browned and the onion is soft, about 5 to 7 minutes. Drain any excess grease.
  2. Stir in the taco seasoning and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a simmer.
  4. Reduce the heat to low. Add the cubed cream cheese and heavy cream. Stir constantly until the cream cheese melts and the sauce becomes smooth and creamy.
  5. Stir in the riced cauliflower. Cover the skillet and cook for 5 minutes, or until the cauliflower is tender.
  6. Remove the lid. Stir in half of the shredded cheddar cheese until melted. Season with salt and pepper.
  7. Sprinkle the remaining cheddar cheese over the top. Cover briefly until the cheese melts, about 1 minute.
  8. Garnish with fresh cilantro before serving.

Notes

  • Use a low-carb, sugar-free taco seasoning to maintain keto macros.
  • If using frozen riced cauliflower, you may need to cook slightly longer to evaporate excess moisture.
  • For extra fat, add 1/4 cup of sour cream along with the heavy cream.
