Ingredients
Scale
2 lbs chicken wings, separated into flats and drumettes
1 tablespoon baking powder (aluminum-free for best results)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese, finely grated
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 cup unsalted butter, melted
2 cloves garlic, minced
Instructions
Pat the chicken wings completely dry using paper towels. This step is crucial for crispiness.
In a large bowl, toss the dry wings with baking powder, salt, and pepper until evenly coated.
In a separate small bowl, mix the grated Parmesan cheese, garlic powder, and dried oregano.
Lightly spray the air fryer basket with cooking spray. Arrange the wings in a single layer, working in batches if necessary to avoid overcrowding.
Air fry at 380°F (195°C) for 15 minutes.
Flip the wings and continue air frying at 400°F (200°C) for another 5 to 8 minutes, or until the skin is very crisp.
While the wings finish cooking, prepare the butter sauce: Melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1 minute until fragrant. Do not brown the garlic.
Remove the cooked wings from the air fryer and immediately place them in a large bowl.
Sprinkle the Parmesan-herb mixture over the hot wings and toss gently to coat.
Drizzle the melted garlic butter over the wings and toss again until lightly coated. Serve immediately.
Notes
For extra crispiness, you can lightly spray the wings with avocado oil spray before adding the Parmesan mixture in step 4.
Use finely grated Parmesan, as coarse shreds tend to burn quickly in the air fryer.
If you do not have an air fryer, you can bake these wings on a wire rack set over a baking sheet at 425°F (220°C) for 40 to 45 minutes, flipping halfway.
