- 1 cup frozen strawberries
- 4 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup unsweetened almond milk
- 1 tablespoon erythritol or monk fruit sweetener (adjust to taste)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon lemon juice
- 3-4 ice cubes (optional, for extra thickness)
- Place the softened cream cheese, frozen strawberries, heavy cream, almond milk, sweetener, vanilla extract, and lemon juice into a high-speed blender.
- Blend on low speed initially to break down the cream cheese, then increase to high speed.
- Blend until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
- If you desire a thicker consistency, add the ice cubes and blend again until incorporated.
- Taste the smoothie and add more sweetener if needed.
- Pour into a glass and serve immediately.
Notes
- For a thicker, more avocado-like texture, substitute half the heavy cream with 1/4 of a small avocado.
- Use a full-fat cream cheese for the best cheesecake flavor and texture.
- If you want a higher protein smoothie, add one scoop of unflavored or vanilla keto-friendly protein powder.
