Easy Lasagna with Cottage Cheese

Make a delicious, high protein lasagna using cottage cheese instead of ricotta. This easy lasagna recipe is perfect for a comforting family dinner.

Ingredients

  • 1 pound lean ground beef or Italian sausage
  • 1 (24 ounce) jar of your favorite marinara sauce
  • 1 (15 ounce) container of cottage cheese (small curd recommended)
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 oven-ready lasagna noodles
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess fat. Stir in the marinara sauce and simmer for 5 minutes.
  3. In a medium bowl, mix together the cottage cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper until well combined. This is your high protein cheese layer.
  4. Spread about 1 cup of the meat sauce evenly over the bottom of the prepared baking dish.
  5. Arrange three oven-ready lasagna noodles over the sauce.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
  8. Spoon another 1 cup of meat sauce over the mozzarella.
  9. Repeat the layers: three more noodles, the remaining cottage cheese mixture, one-third of the mozzarella, and another cup of sauce.
  10. Top with the final three noodles, the remaining sauce, and the remaining mozzarella cheese.
  11. Cover the baking dish tightly with aluminum foil.
  12. Bake for 25 minutes. Remove the foil and bake for an additional 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are browned.
  13. Let the baked pasta rest for 10 minutes before slicing and serving your family dinner.

Notes

  • Using oven-ready noodles makes this recipe much easier and faster than traditional lasagna.
  • For extra flavor, you can substitute half of the ground beef with ground Italian sausage.
  • This recipe works well as a crockpot lasagna if you layer it in a slow cooker and cook on low for 4-5 hours.
