A straightforward recipe for baked lasagna using cottage cheese for a creamy texture and higher protein content.

  • 1 (16 ounce) package lasagna noodles
  • 1 (15 ounce) container cottage cheese, low fat or regular
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (24 ounce) jar meat sauce or marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Cook the lasagna noodles according to package directions until al dente. Drain the noodles and set them aside.
  3. In a medium bowl, combine the cottage cheese, squeezed dry spinach, egg, 1/2 cup Parmesan cheese, basil, oregano, salt, and pepper. Mix well.
  4. Spread about 1 cup of the meat sauce evenly over the bottom of the prepared baking dish.
  5. Arrange one-third of the cooked noodles over the sauce, slightly overlapping if necessary.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
  8. Spoon another 1 cup of sauce over the mozzarella.
  9. Repeat the layers: noodles, remaining cottage cheese mixture, one-third of the mozzarella, and another cup of sauce.
  10. Top with the final layer of noodles, the remaining sauce, and the remaining mozzarella cheese. Sprinkle with extra Parmesan cheese.
  11. Cover the baking dish tightly with aluminum foil.
  12. Bake for 25 minutes. Remove the foil and bake for an additional 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are browned.
  13. Let the lasagna rest for 10 minutes before slicing and serving.

Notes

  • If you prefer a meat sauce, brown 1 pound of ground beef or turkey and mix it with your jarred sauce.
  • For a smoother filling, pulse the cottage cheese mixture briefly in a food processor before spreading.
  • If you are short on time, use no-boil lasagna noodles and adjust the baking time as directed on the noodle package.
