Make an elegant and flavorful Lavender Lemon Pots de Crème. This creamy custard dessert offers a delicate floral note from the lavender balanced perfectly with bright lemon.

Ingredients

  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon dried culinary lavender buds
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a small saucepan, combine the heavy cream, milk, and lavender buds. Heat over medium heat until it just begins to simmer around the edges. Do not boil.
  3. Remove the cream mixture from the heat, cover, and let the lavender steep for 15 minutes.
  4. Strain the cream mixture through a fine-mesh sieve into a clean bowl to remove the lavender buds. Discard the buds.
  5. In a separate bowl, whisk together the egg yolks and sugar until pale and slightly thickened.
  6. Slowly drizzle about half of the warm lavender cream into the egg yolk mixture while whisking constantly to temper the eggs.
  7. Pour the tempered egg mixture back into the saucepan with the remaining cream. Whisk in the lemon juice, lemon zest, and salt.
  8. Pour the custard mixture into four small ramekins.
  9. Place the ramekins in a baking dish. Carefully pour hot water into the baking dish until the water reaches halfway up the sides of the ramekins. This water bath helps the custard cook evenly.
  10. Bake for 30 to 35 minutes, or until the edges are set but the center still has a slight jiggle.
  11. Carefully remove the ramekins from the water bath and let them cool to room temperature.
  12. Chill in the refrigerator for at least 4 hours, or until fully set. Serve cold.

Notes

  • Use only culinary-grade lavender for consumption.
  • For an extra smooth texture, you can press the final custard mixture through a sieve again before pouring into ramekins.
  • If you prefer a stronger lavender flavor, steep the buds for 20 minutes, but be cautious as it can become soapy.
