  • 1 cup cooked, chopped leftover turkey
  • 6 large eggs
  • 1/2 cup milk (any kind)
  • 1/4 cup shredded cheese (cheddar or Swiss work well)
  • 2 tablespoons finely chopped onion
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cooking spray or butter for the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with cooking spray or butter.
  2. Divide the chopped turkey evenly among the 12 muffin cups.
  3. In a medium bowl, whisk together the eggs and milk until fully combined.
  4. Stir in the shredded cheese, chopped onion, parsley, salt, and pepper.
  5. Carefully pour the egg mixture over the turkey in each muffin cup, filling them about three-quarters full.
  6. Bake for 18 to 20 minutes, or until the egg is set and the tops are lightly golden.
  7. Let the quiche cups cool in the tin for 5 minutes before carefully removing them with a small offset spatula or butter knife.
