A simple recipe for making flavorful, juicy chicken thighs with crispy skin using lemon and garlic.

  • 6 bone-in, skin-on chicken thighs
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken thighs completely dry using paper towels. This helps achieve crispy skin.
  3. In a small bowl, mix the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, pepper, and red pepper flakes to create the marinade.
  4. Place the chicken thighs in a large bowl or a sealable plastic bag. Pour the marinade over the chicken and rub it thoroughly to coat all sides. Let it marinate for at least 15 minutes, or up to 4 hours in the refrigerator.
  5. Arrange the chicken thighs skin-side up in a single layer on a rimmed baking sheet. Discard any excess marinade.
  6. Roast for 35 to 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is golden brown and crisp.
  7. Let the chicken rest for 5 minutes before serving.

Notes

  • For a one-pan meal, add 1 pound of chopped root vegetables like potatoes or carrots to the baking sheet around the chicken during the last 30 minutes of cooking.
  • To ensure maximum crispiness, avoid overcrowding the baking sheet. Use two sheets if necessary.
  • If the skin is not brown enough after reaching the correct internal temperature, place the chicken under the broiler for 1 to 2 minutes, watching closely to prevent burning.
