Make these Lemon Garlic Roasted Chickpeas for a crunchy, flavorful, and healthy snack. They are perfect for replacing packaged chips and satisfy your craving for something bright and crispy.

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Zest of 1/2 lemon
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dry the rinsed chickpeas thoroughly using a clean kitchen towel or paper towels. This step is key for crispiness.
  3. In a bowl, toss the dried chickpeas with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.
  4. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 20 to 25 minutes, shaking the pan halfway through, until they are golden brown and crunchy.
  6. Remove from the oven. Immediately toss the hot chickpeas with the fresh lemon zest and lemon juice.
  7. Let them cool slightly before serving. Enjoy your homemade snack!

Notes

  • Make sure the chickpeas are completely dry before adding oil; excess moisture prevents crisping.
  • You can adjust the garlic powder or paprika to your taste preference.
  • Store leftovers in a loosely covered container at room temperature for up to three days. Do not store in an airtight container, or they will lose their crunch.
