Make these Lemon Garlic Roasted Potatoes for a simple side dish bursting with bright citrus and deep garlic flavor. They roast up beautifully crispy, making any meal feel special.

  • 2 lbs Yukon Gold potatoes, cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cut potatoes with olive oil, minced garlic, rosemary, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet. Do not overcrowd the pan.
  4. Roast for 30 to 35 minutes, flipping the potatoes halfway through, until they are golden brown and tender inside.
  5. Remove the potatoes from the oven. Immediately toss them with the lemon zest and lemon juice.
  6. Transfer the potatoes to a serving dish. Garnish with fresh parsley before serving hot.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then dry them completely before tossing with oil.
  • If you prefer a stronger garlic taste, add a few whole, unpeeled garlic cloves to the pan during roasting and squeeze the soft roasted garlic over the finished potatoes.
  • Use Yukon Gold or small red potatoes; they hold their shape well during roasting.
