2 teaspoons baking powder
1/2 teaspoon baking soda

1 large egg
1 cup whole milk
1/2 cup ricotta cheese (whole milk preferred)
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted, plus more for the griddle
Instructions
Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
In a separate bowl, whisk the egg, milk, ricotta cheese, lemon zest, lemon juice, and vanilla extract until just combined.
Pour the wet ingredients into the dry ingredients. Gently fold until just mixed. Do not overmix; a few lumps are fine.
Stir in the melted butter.
Heat a lightly buttered griddle or large nonstick skillet over medium heat.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2 to 3 minutes per side, until bubbles form on the surface and the edges look set. Flip and cook the other side until golden brown.
