  • 3 pounds Russet potatoes, peeled and thinly sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sour cream
  • 8 ounces cream cheese, softened
  • 4 cups shredded sharp cheddar cheese, divided
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup chopped green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees F. Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the chicken broth, heavy cream, sour cream, and softened cream cheese until smooth.
  3. Stir in 3 cups of the shredded cheddar cheese, bacon, green onions, salt, and pepper into the cream mixture.
  4. Gently fold in the sliced potatoes until they are evenly coated.
  5. Pour the potato mixture into the prepared baking dish.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil. Sprinkle the remaining 1 cup of cheddar cheese over the top.
  8. Bake uncovered for another 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  9. Let the casserole rest for 10 minutes before serving.

Notes

  • You can substitute Monterey Jack cheese for some of the cheddar for a milder flavor.
  • For extra richness, add 1/2 cup of melted butter to the cream mixture.
  • To make this ahead of time, assemble the casserole completely, cover tightly, and refrigerate for up to 24 hours. Add 10-15 minutes to the covered baking time if baking straight from the refrigerator.
