Ingredients
Potatoes (about 2 lbs)
Butter (1/2 cup)
Garlic (4 cloves, minced)
Heavy Cream (1/2 cup)
Shredded Cheddar Cheese (1 cup)
Shredded Mozzarella Cheese (1/2 cup)
Salt (to taste)
Black Pepper (to taste)
Fresh Chives (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Wash and dice the potatoes into 1-inch cubes. You do not need to peel them.
In a large skillet, melt the butter over medium heat.
Add the minced garlic to the butter and cook for about one minute until fragrant. Do not let the garlic brown.
Add the diced potatoes to the skillet. Season with salt and pepper.
Cook the potatoes, stirring occasionally, until they start to soften and lightly brown, about 10-15 minutes.
Pour in the heavy cream. Stir well to coat the potatoes.
Continue cooking until the cream thickens slightly, about 3-5 minutes.
Stir in the cheddar and mozzarella cheeses until they melt and coat the potatoes beautifully.
Transfer the mixture to a baking dish.
Bake for 10 minutes, or until bubbly and heated through.
Garnish generously with fresh chives before serving hot.
Notes
We like leaving the skins on the potatoes for extra texture and nutrients.
For an extra garlicky punch, use roasted garlic instead of fresh.
You can substitute Gruyère cheese for a nuttier flavor profile.
