  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups cooked rice (white or brown)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (frozen or canned)
  • 1/2 cup salsa
  • 1/2 cup shredded cheese (Monterey Jack or cheddar)
  • 1/4 cup sour cream or Greek yogurt
  • 1 avocado, sliced or diced
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Season the chicken breasts with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook the seasoned chicken for 6-8 minutes per side, until fully cooked (internal temperature reaches 165°F).
  4. Remove chicken, let it rest for 5 minutes, then shred or dice it.
  5. In the same skillet, warm the black beans and corn for 2 minutes.
  6. Divide the cooked rice among your serving bowls.
  7. Top the rice with the warm chicken, bean, and corn mixture.
  8. Add your desired toppings: salsa, shredded cheese, sour cream, avocado slices, and fresh cilantro.
  9. Serve immediately or cover and refrigerate for later.

Notes
