  • 1/2 cup chopped bok choy
  • 1/4 cup shredded carrots
  • 1/4 cup corn kernels
  • 2 green onions, sliced
  • Optional: hard-boiled egg, cooked chicken, tofu

Instructions

  1. Cook ramen noodles according to package directions. Drain and rinse with cold water.
  2. In a small bowl, whisk together vegetable broth, soy sauce, sesame oil, ginger, and garlic.
  3. In a large mason jar, layer the ingredients in the following order: cooked ramen noodles, mushrooms, bok choy, carrots, and corn.
  4. Pour the broth mixture over the layered ingredients.
  5. Add green onions and any optional toppings.
  6. Seal the jar tightly.
  7. To serve, pour the contents of the jar into a bowl and heat in the microwave or on the stovetop until hot.
