A recipe for a delicate cake flavored with Earl Grey tea and vanilla, inspired by the classic London Fog beverage.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 3 Earl Grey tea bags (or 2 tablespoons loose leaf tea)
  • 1/4 cup boiling water
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour one 8-inch round cake pan.
  2. Steep the Earl Grey tea in 1/4 cup of boiling water for 10 minutes. Squeeze the tea bags or strain the loose leaves. Let the tea cool slightly.
  3. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  7. Gently fold in the cooled Earl Grey tea infusion. Do not overmix.
  8. Pour the batter into the prepared cake pan.
  9. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  11. To make the glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.

Notes

  • For a stronger tea flavor, steep the tea for 15 minutes.
  • You can substitute the milk with heavy cream for a richer crumb.
  • Add 1/4 teaspoon of dried, food-grade lavender buds to the dry ingredients for an authentic London Fog taste.
