3 large Russet potatoes, cut into fries
4 cups vegetable oil for frying
1/2 cup all-purpose flour
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup mayonnaise
1 tablespoon Creole mustard
1 teaspoon hot sauce
1 teaspoon lemon juice
Instructions
Soak the cut potatoes in cold water for 30 minutes. Drain and pat them completely dry with paper towels.
Mix the flour, smoked paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper in a shallow dish to create the Voodoo seasoning blend.
Heat the vegetable oil in a deep pot or fryer to 325°F (160°C).
Lightly dredge the dried fries in the seasoning blend, shaking off any excess.
Fry the potatoes in small batches for 5 to 7 minutes until they are pale and cooked through. Remove them with a slotted spoon and drain on a wire rack.
Increase the oil temperature to 375°F (190°C).
Return the fries to the hot oil and fry for an additional 2 to 4 minutes until they are golden brown and crisp. Remove and drain again.
While the fries cook the second time, prepare the sauce: mix the mayonnaise, Creole mustard, hot sauce, and lemon juice in a small bowl.
Toss the hot, crispy fries with any remaining Voodoo seasoning blend immediately after frying.
Serve the Louisiana Voodoo Fries hot with the spicy remoulade sauce for dipping.
Notes
For a crispier fry, double-fry using the method described.
You can bake these fries at 425°F for 25 minutes, tossing halfway, if you prefer not to deep fry.
Adjust the cayenne pepper amount to control the heat level of your seasoning.
