Make delicious, sweet, and spicy Mango Habanero Pork Carnitas. This recipe offers a tropical twist on classic pulled pork, perfect for tacos or bowls.

  • 3 lbs pork shoulder, trimmed and cut into 2-inch chunks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 ripe mango, peeled and diced
  • 1 habanero pepper, minced (remove seeds for less heat)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano

Instructions

  1. Season the pork chunks with salt and pepper.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Brown the pork on all sides. Remove pork and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Return the pork to the pot. Pour in chicken broth, orange juice, lime juice, honey, and apple cider vinegar.
  5. Stir in cumin and oregano. Bring the mixture to a simmer.
  6. Cover the pot and transfer it to a preheated oven at 325°F (160°C). Cook for 3 to 3.5 hours, or until the pork is fork-tender.
  7. Remove the pork from the oven. Shred the meat using two forks.
  8. Stir the diced mango and minced habanero into the shredded pork and cooking liquid.
  9. Return the pot to the stovetop over medium heat. Cook uncovered for 10-15 minutes, stirring occasionally, until the sauce reduces and thickens slightly, coating the meat.
  10. Serve hot.

Notes

  • For a slow cooker method, combine all ingredients except mango and habanero. Cook on low for 6-8 hours. Shred meat, then stir in mango and habanero and cook on high for 30 minutes uncovered to reduce sauce.
  • Adjust the amount of habanero based on your preferred spice level. Start small if you are new to heat.
  • This carnitas tastes even better the next day after the flavors have fully melded.
