4 bone-in pork chops (about 1 inch thick)
1 tablespoon olive oil
Salt and black pepper to taste
1 cup apple cider
1/2 cup pure maple syrup
1/4 cup apple cider vinegar
2 tablespoons Dijon mustard
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 tablespoon butter
Instructions
Season the pork chops generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown. Remove chops and set aside.
Reduce heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add minced garlic and cook for 1 minute more until fragrant.
Pour in the apple cider and apple cider vinegar. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
Whisk in the maple syrup and Dijon mustard. Let the sauce simmer and reduce slightly for about 5 minutes.
Return the pork chops to the skillet. Spoon some of the sauce over the top of each chop.
Cover the skillet and continue to cook on low heat for 8-12 minutes, or until the internal temperature of the pork reaches 145°F.
Remove chops from the skillet. Stir the 1 tablespoon of butter into the remaining sauce until melted and smooth.
Serve the pork chops immediately, spooning the warm maple apple sauce over them.
Notes
For extra flavor, use fresh apple cider instead of store-bought if available.
You can substitute pork loin chops if bone-in chops are not available. Adjust cooking time accordingly.
This sauce pairs wonderfully with roasted root vegetables or creamy mashed potatoes.
