Make your next pork chops juicy and flavorful with this simple citrus garlic marinade. It works great for grilling or baking.

  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 bone-in pork chops (about 1 inch thick)

Instructions

  1. In a medium bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, Dijon mustard, oregano, pepper, and salt to create the citrus garlic pork chop marinade.
  2. Place the pork chops in a large, resealable plastic bag or a shallow dish.
  3. Pour the marinade over the pork chops, making sure they are fully coated.
  4. Seal the bag or cover the dish. Refrigerate for at least 2 hours, or up to 8 hours for the best flavor. Do not marinate overnight if using citrus juice, as the acid can start to break down the meat too much.
  5. Remove the pork chops from the marinade, letting excess drip off. Discard the remaining marinade.
  6. Grill over medium-high heat for 5-7 minutes per side, or until the internal temperature reaches 145 degrees Fahrenheit. Alternatively, bake at 400 degrees Fahrenheit for 20-25 minutes.
  7. Let the pork chops rest for 5 minutes before serving.

Notes

  • For a low-sodium option, reduce the added salt to 1/4 teaspoon and use fresh herbs instead of dried.
  • If you prefer a sweeter flavor, you can substitute half of the orange juice with honey to make a honey mustard pork chops variation.
