1/2 cup soy sauce (low sodium)
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 cup fresh orange juice
Instructions
In a medium bowl, whisk together the soy sauce, olive oil, apple cider vinegar, Dijon mustard, minced garlic, thyme, pepper, and orange juice until fully combined.
Place your pork chops in a large, resealable plastic bag or a shallow dish.
Pour the marinade over the pork chops, ensuring they are fully coated.
Seal the bag or cover the dish.
Refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor. Do not marinate longer than 4 hours due to the acid content.
Remove the pork chops from the marinade and pat them dry before cooking on the grill or in the oven. Discard the remaining marinade.
Notes
For a honey-mustard variation, replace the orange juice with 1/4 cup of honey and increase the Dijon mustard to 2 tablespoons.
If you prefer an Asian flavor, substitute the apple cider vinegar with rice vinegar and add 1 tablespoon of grated fresh ginger.
For best results when grilling, cook over medium heat until the internal temperature reaches 145 degrees Fahrenheit.
