Three distinct marinade recipes designed to complement raw or seared tuna steaks, including Asian, Citrus Herb, and Savory Garlic profiles.

Ingredients

Scale
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme
  • 2 cloves garlic, crushed
  • 1/2 teaspoon salt
  • 4 tuna steaks (about 6 oz each)

Instructions

  1. For the Asian Marinade: Whisk together soy sauce, sesame oil, rice vinegar, ginger, and minced garlic in a bowl.
  2. For the Citrus Herb Marinade: Whisk together lime juice, olive oil, cilantro, Dijon mustard, oregano, and pepper.
  3. For the Savory Garlic Marinade: Whisk together olive oil, lemon juice, thyme, crushed garlic, and salt.
  4. Place tuna steaks in separate zip-top bags or shallow dishes, one for each marinade. Pour the corresponding marinade over the tuna.
  5. Seal the bags or cover the dishes. Refrigerate for 15 to 30 minutes. Do not marinate longer than 30 minutes to prevent the acid from curing the fish.
  6. Remove tuna from the marinade and pat dry before searing or grilling. Discard used marinade.

Notes

  • Marinate tuna for only 15 to 30 minutes; longer times can cause the fish to become firm, similar to ceviche.
  • Always pat the tuna steaks dry with paper towels before cooking to achieve a good sear.
  • These marinades work well for grilling, pan-searing, or preparing raw tuna for poke bowls.
