Marry Me Chicken is a dish featuring tender chicken simmering in a rich, creamy garlic-Parmesan sauce, often with sun-dried tomatoes. This easy one-pan dinner is simple to make and delicious.

  • 1.5 lbs boneless, skinless chicken breasts, thinly sliced
  • 1 tbsp olive oil
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 1/2 tsp dried Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken slices with salt and pepper.
  3. Add chicken to the skillet and cook until golden brown and cooked through, about 3-4 minutes per side. Remove chicken from the skillet and set aside.
  4. Reduce heat to medium. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  6. Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Bring to a gentle simmer.
  7. Return the cooked chicken to the skillet, coating it in the sauce.
  8. Simmer for 5-7 minutes, or until the sauce thickens slightly and the chicken is heated through.
  9. Garnish with fresh parsley before serving.

Notes

  • Serve Marry Me Chicken over pasta, rice, or with crusty bread to soak up the creamy sauce.
  • You can add a handful of fresh spinach to the sauce during the last few minutes of cooking for added vegetables.
