Create a wonderfully creamy Matcha White Chocolate Cheesecake. This dessert balances the earthy notes of matcha with the sweetness of white chocolate for a truly special treat.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup white chocolate chips, melted and cooled slightly
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon matcha powder
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool.
  3. In a large bowl, beat the softened cream cheese until smooth.
  4. Gradually beat in the 3/4 cup sugar until just combined.
  5. Beat in the cooled melted white chocolate and vanilla extract.
  6. In a small bowl, whisk the matcha powder with the heavy cream until smooth. Add this matcha mixture to the cream cheese mixture and mix on low speed until just blended. Scrape down the sides.
  7. Beat in the eggs one at a time, mixing only until each egg is incorporated. Do not overmix.
  8. Pour the batter over the cooled crust. Place the springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan to reach halfway up the sides of the springform pan (water bath).
  9. Bake for 55 to 65 minutes, or until the edges are set but the center still jiggles slightly.
  10. Turn off the oven, crack the oven door open, and let the cheesecake cool inside the oven for 1 hour.
  11. Remove the cheesecake from the water bath. Cool completely on a wire rack, then chill in the refrigerator for at least 6 hours, or preferably overnight, before serving.
