Make this fresh, light salad featuring crisp cucumber and ripe tomatoes tossed in a simple lemon and oregano dressing. It is a quick, no-cook side dish perfect for summer meals.

Ingredients

  • 2 large cucumbers, diced
  • 3 medium ripe tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Dice the cucumbers and chop the tomatoes. Thinly slice the red onion. Place all prepared vegetables and the olives into a large bowl.
  2. Make the vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper until combined.
  3. Dress the salad: Pour the vinaigrette over the vegetables. Gently toss everything together until the vegetables are evenly coated.
  4. Add herbs and chill: Stir in the chopped fresh parsley. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
  5. Serve cold or at room temperature.

  • For a heartier salad, add 1 cup of crumbled feta cheese before serving.
  • Use English or Persian cucumbers for fewer seeds and crisper texture.
  • If you prefer a milder onion flavor, soak the sliced red onion in cold water for 10 minutes, then drain well before adding to the salad.
