Ingredients

  • 2 cups mixed nuts (almonds, walnuts, pecans)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon sea salt
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, toss the mixed nuts with the olive oil until lightly coated.
  3. In a small bowl, mix together the cumin, coriander, smoked paprika, oregano, sea salt, and cayenne pepper, if using.
  4. Sprinkle the spice mixture over the oiled nuts. Toss well to coat every nut evenly.
  5. Spread the seasoned nuts in a single layer on the prepared baking sheet.
  6. Bake for 10 to 12 minutes, stirring halfway through, until fragrant and lightly toasted. Watch carefully to prevent burning.
