Mediterranean Spinach and Feta Cheese Crisps

Bake these simple crisps featuring spinach, salty feta cheese, and Mediterranean herbs until they are golden brown and crisp.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 10 ounces fresh spinach, roughly chopped
  • 4 ounces feta cheese, crumbled
  • 1 large egg, lightly beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon fresh dill, chopped
  • 1/4 teaspoon black pepper
  • 1 package (16 sheets) phyllo dough, thawed
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. Heat the olive oil in a skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
  3. Add the spinach to the skillet. Cook until the spinach wilts completely. Remove from heat and squeeze out as much excess liquid as possible using a clean kitchen towel or paper towels.
  4. In a medium bowl, combine the drained spinach mixture, crumbled feta cheese, beaten egg, oregano, dill, and black pepper. Mix well.
  5. Lay one sheet of phyllo dough flat on a clean surface. Brush the entire surface lightly with melted butter.
  6. Place another sheet of phyllo dough directly on top of the first sheet. Brush this second sheet with butter. Repeat this process until you have a stack of four buttered phyllo sheets.
  7. Cut the stacked phyllo sheets into four equal squares.
  8. Place about 1 tablespoon of the spinach and feta filling onto one corner of each square.
  9. Fold the phyllo square over the filling diagonally to form a triangle, pressing the edges firmly to seal. You can crimp the edges with a fork for extra security.
  10. Place the finished crisps on the prepared baking sheets. Repeat the layering and filling process until all the filling is used, creating 16 crisps total.
  11. Brush the tops of the crisps lightly with any remaining melted butter.
  12. Bake for 15 to 18 minutes, or until the crisps are golden brown and crisp.
  13. Let the crisps cool slightly on the baking sheet before serving.

Notes

  • Squeeze the spinach very dry; excess moisture prevents the crisps from becoming fully crisp.
  • If you prefer a different shape, you can roll the filled phyllo squares into small cigars instead of folding them into triangles.
  • Use good quality feta cheese for the best flavor.
