10 sheets phyllo dough
4 tablespoons unsalted butter, melted
1 tablespoon olive oil
10 ounces fresh spinach, chopped
4 ounces feta cheese, crumbled
1/4 cup grated Parmesan cheese
1 large egg, lightly beaten
1/4 teaspoon ground nutmeg
Pinch of black pepper
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking sheet.
In a skillet, heat the olive oil over medium heat. Add the chopped spinach and cook until wilted, about 3 to 4 minutes. Squeeze out any excess moisture from the spinach.
In a medium bowl, combine the wilted spinach, crumbled feta cheese, Parmesan cheese, beaten egg, nutmeg, and black pepper. Mix well until everything is evenly distributed. This is your filling.
Lay one sheet of phyllo dough flat on your work surface. Brush the entire surface lightly with melted butter.
Place a second sheet of phyllo dough directly on top of the first. Brush this sheet lightly with melted butter. Repeat this process until you have a stack of 5 buttered sheets.
Cut the stacked phyllo sheets into 9 equal squares.
Place about 1 tablespoon of the spinach and feta filling onto the center of each square.
Fold the corners of the phyllo square over the filling to meet in the center, creating a small, rustic pouch or crisp shape. Gently press the edges to seal.
Place the assembled crisps on the prepared baking sheet. Repeat the process with the remaining 5 sheets of phyllo and filling to make 18 crisps total.
Brush the tops of the crisps lightly with any remaining melted butter.
Bake for 12 to 15 minutes, or until the phyllo is golden brown and crisp.
Remove from the oven and let cool slightly before serving your quick feta cheese crisps.
Notes
For an air fryer spinach feta crisp variation, cook at 350 degrees Fahrenheit for 6 to 8 minutes, checking frequently to prevent burning.
You can assemble these savory Greek pastries ahead of time and freeze them unbaked. Place them on a tray in the freezer, and once solid, transfer them to a freezer bag. Bake from frozen, adding 3 to 5 minutes to the bake time.
