Instructions

  1. Preheat your oven to the lowest setting, typically between 170F and 200F (75C to 95C). Line two large baking sheets with parchment paper.
  2. Ensure your mixing bowl and whisk attachment are completely clean and dry. Add the room temperature egg whites and the pinch of salt to the bowl.
  3. Begin whipping the egg whites on medium-low speed until they become foamy. Add the cream of tartar and increase the speed to medium-high.
  4. Once soft peaks form (the peaks curl over when the whisk is lifted), slowly begin adding the granulated sugar, one tablespoon at a time, waiting about 30 seconds between additions. This slow addition is key to stable meringue.
  5. Continue beating on high speed until stiff, glossy peaks form. When you lift the whisk, the peak should stand straight up without drooping. Rub a small amount between your fingers; it should feel smooth, not gritty.
  6. Beat in the vanilla extract quickly, mixing just until combined.
  7. Transfer the meringue to a piping bag fitted with your desired tip (a star tip creates classic meringue kisses).
  8. Pipe small mounds or kisses onto the prepared baking sheets, leaving about an inch between each one.
  9. Bake (dry) in the low-temperature oven for 1 to 1.5 hours, depending on the size of your cookies and your oven’s accuracy. They should feel dry and lift easily from the parchment paper when done.
  10. Turn off the oven, prop the door open slightly with a wooden spoon, and allow the meringue cookies to cool completely inside the oven for at least 1 hour, or even overnight. This slow cooling prevents cracking.
  11. Store the finished, crisp meringue treats in an airtight container at room temperature.

  • For flavored meringue cookies, you can substitute 1 teaspoon of vanilla with 1/2 teaspoon of peppermint extract or add 1 tablespoon of dry Jello powder along with the sugar for colorful Jello meringue cookie variations.
