Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a large bowl, whisk the vegetable oil and granulated sugar until combined. Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Fold in the grated carrots and chopped walnuts, if using.
Divide the batter evenly between the prepared cake pans.
Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
